Sweet & Spicy Baked Chicken & Spinach Meatballs


1 pound ground chicken
2 large eggs, lightly beaten
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry 1/2 cup seasoned bread crumbs
1/4 cup Parmesan cheese
1/4 cup honey
1/4 cup Tabañero Agave Sweet & Spicy Hot Sauce
1 tablespoon minced onion
1/4 cup diced onion
1 garlic clove, minced
Salt and pepper to taste


  1. Preheat oven to 350 degrees.

  2. Combine all ingredients in a large mixing bowl, stirring gently until well mixed.

  3. Line a large baking sheet with a silicone baking mat or spray with non-stick cooking spray. Spray clean hands with cooking spray so the meatballs don't stick.

  4. Scoop about 11/2 tablespoons of mixture into your hands and roll into balls.Place meatballs on baking sheet and bake about 30-35 minutes, or until chicken is completely cooked through .
