Ingredients
- 1 Pork Ribeye (2 - 3 Lbs.)
- 1 Cup Al Pastor Seasoning Mix
- 2 Cups Tabañero Original Hot Sauce
- 1/2 Cup Cilantro, Finely Chopped
- 1/4 Cup Lime Juice, Fresh Squeezed
- 2 Cups Pineapple, Small Dice
- 1/2 Cup Red Onion, Small Dice
- 2 Jalapeños, Seeded and Finely Chopped
- Kosher Salt & Fresh Cracked Black Pepper, To Taste
- 24 Tortillas
Instructions
- Marinate Pork Ribeye for 2 hours. Then grill until medium/well or until internal temperature hits 160-165 degrees Fahrenheit.
- While pork is cooking, combine all other ingredients and season to taste with salt and pepper.
- Grill the tortillas until crispy.
- Shred or slice pork, add to tortilla, top with salsa and serve.
