Al Pastor Tacos

Ingredients

  • 1 Pork Ribeye (2 - 3 Lbs)

  • 1 cup Al Pastor Seasoning Mix

  • 2 cups Tabañero Hot Sauce

  • 1/2 cup Cilantro, finely chopped

  • 1/4 cup Lime Juice, fresh squeezed

  • 2 cups Pineapple, small dice

  • 1/2 cup Red onion, small dice

  • 2 Jalapeños, seeded and finely chopped

  • Kosher salt & fresh cracked black pepper, to taste

  • 24 tortillas

Instructions

  1. Marinate Pork Ribeye for 2 hours. Then grill until Medium/well or until Internal temp hits 160-165 degrees Fahrenheit
    1. While pork is cooking, combine all other ingredients and season to taste with salt and pepper.
    2. Grill tortillas.
    3. Shred or slice pork, add to tortilla, top with salsa and serve.
