  • 3 Russet potatoes, scrubbed clean
  • 2 tbsp olive oil
  • 2 tbsp Tabañero Extra Hot Hot Sauce
  • Kosher salt
  • Freshly ground black pepper
  • Pinch cayenne pepper
  • 1 tsp garlic powder
  • 1 1/2 cups shredded cheddar
  • 6 slices bacon, cooked and crumbled
  • Sour cream, for serving
  • 3 green onions, thinly sliced


  1. Preheat oven to 400°.
  2. Slice potatoes into 1/2" coins.
  3. In a large bowl, toss the potato rounds in olive oil and Tabañero Extra Hot Hot Sauce. Season with salt, pepper, cayenne, and garlic powder, and toss until evenly coated.
  4. Place potato rounds in a single layer on a large baking sheet.
  5. Bake for 30 to 40 minutes, until lightly browned and tender, flipping halfway through.
  6. Top each potato round with cheese and bacon. Broil until melty, about 2 minutes.
  7. Dollop sour cream onto each potato and more Extra Hot Hot Sauce if you’re feeling spicy, then garnish with green onions.
