Spicy Buffalo Cauliflower with Blue Cheese Yogurt Dip

  • 1 head cauliflower, cut into 2 inch florets (about 1.5 lbs.)
  • 1-2 cups Tabanero Original Hot Sauce
  • kosher salt and fresh cracked black pepper, to taste
  • 3 tablespoons unsalted butter, room temperature
  • ¾ cup plain yogurt
  • ½ cup blue cheese crumbles
  • celery leaves or scallions to garnish

1. Heat a deep fryer to 350 degrees and remove cauliflower from the refrigerator. Place cauliflower in the fryer and cook until golden brown and floating then drain and transfer to a mixing bowl, season with salt and pepper

2. In a microwave safe bowl, place the Tabanero Original Hot Sauce and butter in microwave. Heat in 15 second increments until butter is melted and sauce is hot. Remove from microwave and mix until combined
Place seasoned cauliflower in bowl with sauce and toss to coat, reserve warm

3. Mix the yogurt and blue cheese together, season with salt and pepper

4. Transfer cauliflower to serving platter and garnish with blue cheese yogurt and celery leaves. Serve with extra sauce on the side
