Americana Hot Dog (Extra Hot Flavor)

Prep: 1 hour ∙ Cook: 20 min ∙ Makes: 10 - 12 Hot Dogs ∙ Difficulty: Medium

INGREDIENTS

  • Bacon Praline**
  • 1# of Thick Cut Bacon
  • 1/3 Cup of Brown Sugar
  • 1/4 Cup of Pecans
  • Tabañero Aioli** 
  • 1/2 Cup of Confit
  • 1 cup Canola Oil
  • 1 Tbs. Fresh Lemon Juice
  • 1 Tbs. Apple Cider Vinegar
  • 2 each Eggs
  • 1 tsp. Salt 
  • 1/2 tsp. Salt
  • 1/2 tsp. White Pepper
  • 1/2 Cup of Extra Hot Tabañero
  • Cartelized Onions
  • 1 Red Onion (Julienned)
  • 2 Tbsp Canola Oil
  • Marinated Cucumbers & Tomatoes
  • 4 Plum Tomatoes (Seeded & Diced)

DIRECTIONS

Bacon Praline**:
Preheat your oven to 375 degrees. Line a half sheet pan with aluminum foil. Arrange the bacon in a single layer on a cooling rack, and set it in the prepared sheet pan. Bake until the bacon browns and the fat is rendered and bubbly. About 20 to 25 minutes.

Combine the brown sugar and pecans in a small food processor. Pulse about 15 times or until the pecans are finely chopped.

Remove the bacon from the oven, sprinkle with the brown sugar mixture, and pat down to adhere. Return to the oven a bake until the bacon is crisp, about 7-10 minutes. Cool on the rack for 10 minutes. Dice into medium sized pieces or keep whole.

Caramelized Onions:
In a large sauce pan over high heat, pour the oil into the pan. Then add the onions and toss until fully coated. Reduce heat to half and continue tossing or stirring every couple minutes until the onions are golden in color, soft and sweet.

Tabanero Aioli**:
Combine eggs, vinegar, lemon juice, garlic confit, salt & pepper into the robot coupe and puree. SLOWLY stream the oil into the top of the robot coupe to emulsify the aioli until very thick. Then stream the Tabanero into the Aioli until fully incorporated. Place the Tabanero Aioli in a squeeze bottle, refrigerate until ready to use.

Marinated Cucumbers & Tomatoes
In a medium bowl, combine the diced Cucumbers and Tomatoes with the vinegar, olive oil and salt & pepper. Toss together until fully combined. Refrigerate for 5-10 minutes until chilled.

To Serve:
Toast or steam your Hot Dog Buns. Boil and/or Grill your hot dogs and place them into the buns. Spoon a heaping layer of the marinated cucumbers & tomatoes onto your hot 
dogs. Layer a stripe of caramelized onions on top. Then Zig Zag the Tabanero Aioli over the two layers. Then place the bacon praline atop or on either side of the hot dog, and enjoy!

**You should prep these items ahead to significantly cut down on preparation time
