Fried Egg over Quinoa with Avocado, Tomatoes, and Corn
- 1/4 cup uncooked quinoa
- 1 egg
- 1/2 tomato, chopped
- 1/4 avocado, sliced
- 1/4 cup fresh corn kernels
- fresh basil, chopped
- hot sauce (I used the new Tabanero!)
- Cook quinoa as directed.
- Over medium-high heat, fry the egg to your liking. Meanwhile, arrange quinoa, tomato, avocado, and corn on a plate.
- Once egg has cooked, place atop quinoa and add basil and hot sauce.
For very few ingredients and steps, I must admit that this is one of the best things I’ve made. I firmly believe it’s because I used fresh, local ingredients and the Tabanero sauce really pulled all the elements together. This would be great for any meal of the day. You have to try it! Some other suggestions would be to add black beans, cheese, or cilantro.
