  • 16 ounces of Velveeta cheese
  • 1 cup of black beans, drained and rinsed
  • ½ of a small red onion, diced
  • 1 small jalapeno, seeded and diced
  • 1 pair of gloves (for handling the jalapeño peppers)
  • 1 10-ounce can of diced tomatoes with green chilis, drained
  • 2 dashes of Tabañero Key Lime Habanero Hot Sauce
  • 1 tomato, diced
  • 1 tablespoon of fresh cilantro, chopped
  • 1 lime
  • 1 bag of tortilla chips

Instructions

Heat a skillet over medium-high and add the ground beef. Cook for seven minutes or until cooked through, breaking up the meat as it cooks.

Pour the meat into a strainer to drain the grease, then add it back into the skillet. Sprinkle in the salt, black pepper, and red pepper flakes. Stir to blend the seasonings into the cooked ground beef.

Pour the IPA beer into the skillet and simmer for five minutes, allowing it to reduce. Lower the heat to medium-low. Toss in the shredded pepper Jack and Velveeta cheeses. Stir until smooth.

Add the black beans, diced red onion, jalapeño (use gloves), and canned tomatoes with green chilis. Stir until the ingredients meld together and cook for five minutes or until the queso is warm and bubbling.
