How to Make Cherry Pie with Tabañero Black Cherry Sauce

Ingredients:

  • 6 cups sweet cherries, pitted (about 2 1/2 lbs)
  • 2 tablespoons Tabañero Black Cherry hot sauce
  • 3/4 cup sugar (adjust to 1 cup for sour cherries)
  • 5 tablespoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1 tablespoon unsalted butter, diced
  • Egg Wash:
    • 1 egg
    • 1 tablespoon milk or water
    • 1 tablespoon coarse sugar
  • Your favorite double Pie Crust

Instructions:

  1. Prepare the Pie Crust:
    • Start with using your favorite double Pie Crust (homemade or store bought is up to you!) You'll need enough for both the base and lattice top of the pie.
  2. Preheat and Prepare:
    • Preheat your oven to 400°F (200°C). Place a baking sheet lined with parchment paper or foil on the lowest rack to catch any drips during baking.
  3. Prepare the Filling:
    • In a large bowl, combine the pitted cherries, Tabañero Black Cherry hot sauce, sugar, cornstarch, and cinnamon. Toss gently to coat the cherries evenly.
  4. Roll Out the Dough:
    • On a lightly floured surface, roll out one disk of pie dough into a circle about 12 inches in diameter. Carefully transfer it to a 9-inch pie dish, allowing the excess dough to hang over the edges.
  5. Fill the Pie:
    • Spoon the cherry filling into the prepared pie crust. Dot the top of the filling with diced butter.
  6. Create the Lattice Top:
    • Roll out the second disk of pie dough into a similar-sized circle. Using a sharp knife or pastry cutter, slice the dough into strips about 1/2 to 3/4 inch wide. Arrange the strips in a lattice pattern over the filling. Trim any excess dough hanging over the edges and crimp the edges to seal.
  7. Egg Wash and Sugar Sprinkle:
    • In a small bowl, whisk together the egg and milk (or water) to create an egg wash. Brush the lattice and edges of the pie crust with the egg wash. Sprinkle coarse sugar over the top for added crunch and sparkle.
  8. Bake the Pie:
    • Place the pie on the preheated baking sheet in the oven. Bake for 20 minutes at 400°F (200°C), then reduce the oven temperature to 350°F (175°C) and bake for an additional 35 to 40 minutes, or until the crust is golden brown and the filling is bubbling.
  9. Cool and Serve:
    • Allow the pie to cool on a wire rack for at least 2 hours before serving. This resting period helps the filling to set. Serve each slice with a scoop of vanilla ice cream for a perfect combination of flavors and textures.

Enjoy this Cherry Pie with Tabañero Black Cherry sauce as a delicious dessert that blends sweet cherries with a spicy kick – perfect for any occasion.
