Earth Day Tofu Tacos with Spicy Cabbage Slaw and Tabañero Sweet and Spicy Hot Sauce

This recipe yields four servings of crispy, crunchy, spicy tofu tacos and cabbage slaw. Preparation takes 20 minutes, and cooking time is only ten minutes.

Ingredients

Crispy Baked Tofu

  • 1 14-ounce block of extra firm tofu
  • 2 tablespoons of soy sauce
  • 1 tablespoon of apple cider vinegar
  • ¼ teaspoon of kosher salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 2 teaspoons of smoked paprika
  • 3 tablespoons of olive oil, divided
  • 8 hard shell tortillas 

Spicy Cabbage Slaw

  • 4 cups of shredded red cabbage
  • 2 green onions, sliced
  • 1/4 cup cilantro, finely chopped
  • 1 lime, juiced
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of Tabañero Sweet and Spicy Hot Sauce

Toppings

  • ½ cup of vegan yogurt
  • ½ teaspoon of Tabañero Sweet and Spicy Hot Sauce
  • ¼ teaspoon of salt
  • ¼ cup of fresh cilantro, roughly chopped
  • ½ cup of pico de gallo
  • 4 lime wedges

Instructions

First, prepare the tofu by draining any excess liquid and patting it dry with a clean dish towel. Transfer the tofu block to a large bowl and use your hands to crumble it into bite-sized pieces.

Add the soy sauce, apple cider vinegar, salt, garlic powder, chili powder, cumin, and smoked paprika. Drizzle two tablespoons of the olive oil into the same bowl. Toss until evenly coated.

In a large non-stick skillet, heat one tablespoon of olive oil over medium-high. Add the seasoned tofu crumbles and cook for eight to ten minutes. Stir the tofu mixture occasionally and break up any large pieces. Once the tofu is browned and slightly crispy, turn off the heat and transfer to a medium serving bowl.

Thinly slice the red cabbage and green onions and place in a medium mixing bowl. Finely chop the cilantro and add to the same bowl. Add the lime juice, extra virgin olive oil, and Tabañero Sweet and Spicy Hot Sauce. Stir until evenly distributed. Transfer to a medium serving bowl.

Prepare the tofu taco toppings. Combine the vegan yogurt, Tabañero Sweet and Spicy Hot Sauce, and salt in a small mixing bowl. Place the spicy yogurt sauce, cilantro, and pico de gallo into three separate serving bowls.

Warm the tortillas by baking them in the oven for a minute or over the stovetop. Arrange the crispy tofu, spicy cabbage slaw, toppings, and tortillas on a serving try. Serve immediately and allow guests to assemble their own crispy baked tofu tacos.
